Spicy Kimchi Slaw

Spicy Kimchi Slaw

A bold slaw packed with fermented goodness and a kick of spice.

Ingredients

  • 1/2 head white cabbage, finely shredded

  • 1 red pepper, thinly sliced

  • 2 spring onions, finely chopped

  • handful of fresh parsley, chopped

  • handful of fresh coriander, chopped

  • 1 small red onion, finely sliced

  • 1 fresh chilli, finely chopped

  • 3 tbsp kimchi, chopped

  • 100g Yeo Valley Organic Natural Kefir

  • 1 tbsp honey

  • 1 tbsp dijon mustard

  • 1 tbsp apple cider vinegar

Method

1. Toss all vegetables and herbs together in a large bowl.

2. In a separate bowl, whisk together the kefir, honey, mustard, and vinegar.

3. Pour the dressing over the slaw and mix well.

4. Serve fresh or let it sit for 10 minutes to enhance the flavours. It's a delicious topping for one of our burgers.
