Courgette fries with polenta

Crispy, golden courgette fries with a crunchy polenta coating—the perfect match for our burgers!

Ingredients

  • 2 medium courgettes, cut into fries

  • 100g polenta

  • 50g grated parmesan (optional)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & pepper, to taste

  • 1 egg, beaten

  • Olive oil for baking or frying

Method

1. Preheat oven to 200 C (or heat oil in a pan for frying).

2. In a bowl, mix polenta, parmesan (if using), garlic powder, paprika, salt, and pepper.

3. Dip courgette fries in the beaten egg, then coat with the polenta mixture.

4. Arrange on a baking tray, drizzle with olive oil, and bake for 20 minutes until golden and crispy. Alternatively, fry until golden brown.

5. Serve hot with your choice of dipping sauce.
