Yogurt Custard Toast

Transform your weekend breakfast with our twist on classic French toast, topped with fresh berries of your choice. Perfect for lazy mornings and especially yum when served as a surprise breakfast in bed.
Ingredients
4 slices of bread
2 eggs
1/2 tsp of vanilla extract
(optional) 1 tsp of honey
To serve:
poached rhubarb
berries of your choice
Method
1. Preheat your oven to 180°C (fan). In a small bowl mix together the yogurt, eggs and vanilla extract.
2. Place your 4 slices of bread on a baking tray and use the back of a spoon to press the bread down firmly to create a well.
3. Pour your yogurt custard into the wells and then scatter over your chosen berries and poached rhubarb.
4. Place in the oven for 10 - 15 minutes until the custard is set and begins to turn golden.
5. Serve with an extra dollop of yogurt and your chosen fruit.
