Ingredients
Muffins:
2 large eggs
150g Yeo Valley Organic Unsalted Butter (softened)
2 medium-eating apples grated
150g porridge oats
150g plain flour
150g of light soft brown sugar
2 tsp of baking powder
1 tsp bicarbonate of soda
1 tsp cinnamon
1 tsp of vanilla essence
Icing:
5 tbsp Icing sugar
Optional Toppings:
Dried apple rings:
4 apples
Juice of 1 lemon
Cinnamon Sugar:
1 tsp ground cinnamon
2 tsp golden caster sugar
Method
Preheat your oven to 180°C (fan) and line a muffin tin with 12 paper cases.
In a bowl, cream together the butter and sugar until light and fluffy. Then, add the eggs and remaining ingredients until just combined, being careful not to overmix.
Divide the batter evenly among the 12 muffin cases. Bake for 20 minutes, or until a skewer inserted comes out clean. Allow the muffins to cool on a wire rack.
For the icing, mix the Greek Recipe Yogurt and icing sugar. Refrigerate until the muffins are completely cooled and ready to be iced.
Spread the yogurt icing on top and enjoy!
Optional Toppings:
6. You can also decorate the muffins with homemade dried apple rings. To make them, preheat the oven to 160°C (fan). Thinly slice apples (around 3-4 mm thick) and place the slices in a bowl of water mixed with the juice of one lemon to prevent browning.
7. Arrange the apple slices on a wire rack over a baking tray and bake for 30-40 minutes, until dry and almost crisp. Store the dried apple rings in an airtight container for up to 3 months; they make a delicious snack!
8. To make the cinnamon sugar, combine sugar and ground cinnamon in a small bowl. Sprinkle the cinnamon sugar on top of the muffins.
