Seasonal Greens Risotto

Dive into this vibrant, soul-warming risotto! Nutty spelt grains and dark leafy greens come together with a dollop of our Greek Recipe yogurt. Top with crunchy seeds for a bowl that's pure comfort.

Ingredients

  • 150g cavolo nero washed and roughly chopped

  • 4 tbsp olive oil

  • 50g of parmesan

  • 1 garlic clove peeled

  • 150g spelt

  • 1 brown onion diced

  • 2 garlic cloves (1 whole and 1 finely chopped)

  • 1L vegetable (or chicken) stock

  • 200ml white wine

  • 2 generous handfuls of spinach

  • Greek Recipe 5% Fat Natural Yogurt to top

Crunchy Savoury Seeds:

  • 200g mixed seeds

  • 2 sprigs of rosemary, leaves picked and finely chopped

  • 1/2 tsp smoked paprika

  • 1 tbsp soy sauce

  • 1 tbsp honey

  • 1 tbsp olive oil

  • a pinch of dried chilli flakes

Method

1. Bring a large pan of water to the boil. Quickly boil your cavolo nero for 2 minutes, before scooping out and placing it in a blender.

2. Allow to cool slightly as you add your garlic clove, 2 tbsp of olive oil and the grated parmesan to the blender, before blending to a paste.

3. Set aside the blended greens while you start on your risotto. Place a large pan over medium heat and soften your onion and remaining garlic in 2 tbsp of olive oil. Stir your spelt in before adding your white wine. Slowly add your stock while continuing to stir. This will take around 20-25 minutes to cook, when ready it will taste nutty and still have a lovely bite to it.

4. To make your crunchy seed topping, preheat your oven to 170°C (fan), and line a baking sheet with baking paper. Mix all the ingredients together in a small bowl then transfer to the lined baking sheet and spread evenly. Pop in the preheated oven for 15-20 minutes until golden and toasted. Store in an airtight container.

5. When your risotto is ready, stir through your blended greens followed by your spinach. Cook for a few minutes before turning off the heat. Serve with a generous dollop of our Greek Recipe yogurt.

Tip: if you're short on time, the seeds aren't essential, but they can be prepped ahead and stored in an airtight container for up to a month. They also make a delicious snack!
