Rice Pudding with Baked Plums

Serve this comforting dessert with baked plums that will warm you up during the colder months.
Ingredients
120g pudding rice
2 tbsp maple syrup
vanilla - either scrape the seeds from 1 pod or use 1 tsp of vanilla paste
4 plums
1 large orange
2 handfuls of hazelnuts
2 tsp caster sugar
Maple syrup for drizzling
Method
Put the pudding rice into a large pan and add the milk. Add the vanilla and maple syrup then give everything a good mix.
Place the pan on a low heat and cook gently for about 45 mins or until it is
lovely and thick. You’ll need to stir it often.To make the plums, heat the oven to 200°/180° (fan), cut the plums in half removing the stones then place them skin down in an ovenproof dish.
Squeeze the juice from the orange and add to the plums.
Cover the dish with foil and cook in the oven for 20-30mins. When soft, remove the foil and sprinkle some sugar over the top of each plum. Put back in the oven for 5-10 mins, until the sugar has browned.
Heat the hazelnuts in a small pan until gently toasted. Crush with a knife or rolling pin.
To serve, place the plums on top of the rice pudding, scatter with the hazelnuts and add a drizzle of maple syrup if you like.
