Raspberry Lemon Lollies

Cooldown this summer with a refreshing raspberry and lemon ice lolly that uses our lusciously creamy Lemon Curd yogurt.
Ingredients
225g raspberries
1.5 tbsp icing sugar
1tbs of lemon juice
Method
First make the raspberry coulis by blending all the ingredients in a small electric blender. If you don’t have a blender then mash the raspberries with the back of a fork before adding the icing sugar and lemon and mixing.
Sieve the raspberry mixture so you get a smooth coulis.
In a bowl put the lemon curd yogurt and then drizzle in some of the raspberry coulis, gently swirl through without over mixing.
Gently spoon the mixture into the lolly moulds and pop in the freezer for 5-6 hours
