Panettone is one of our favourite festive treats so we love this recipe for a Christmassy pud – very tasty and a great way to use up any panettone leftovers!

Ingredients

500g panettone

100ml Yeo Valley Organic Whole Milk

300ml Yeo Valley Organic Double Cream

5 eggs

75g brown sugar

Nutmeg

A handful of dried apricots (chopped)

1/2 tsp nutmeg

Method

  1. Cut the panettone into wedges and place in a litre dish

  2. Mix the eggs and sugar until the sugar is dissolved then add the milk and cream and stir well.

  3. Pour over panettone and leave to soak for 10 mins.

  4. Sprinkle the apricots and nutmeg over the pudding before baking in the oven at 170C/gas mark 3 for approx 50 mins, until mixture has set and is brown.

  5. Serve and enjoy!
