This quick & easy Lemon Curd fool is a delightful desert perfect for a hot summers evening.

Method

  1. Whip the cream with the sugar and when nearly at full peak, add the juice and zest of the lemons and the yogurt. Whisk a little more if necessary.

  2. Now place into a piping bag. Put the lemon curd into a piping bag also.

  3. Now alternate piping the lemon curd followed by the fool mixture into suitable glasses.

  4. You can top this off with ginger poached rhubarb or crushed ginger biscuits or both!
