Festive Hasselback's With Herby Yogurt Dip

These crispy, accordion-sliced Hasselback potatoes are the ultimate holiday showstopper. Accompanied by a cool and creamy herbed Greek Recipe yogurt dip, this festive side dish is sure to impress. With their fluffy interior and crispy, golden edges, this hassle-free recipe is a Christmas must-make.
Ingredients
1kg of small potatoes
2 tbsp olive oil
Salt and pepper
Herby Dip:
3 small bunches of soft herbs such as chives, parsley and basil
Juice of 1 lemon
Salt and pepper
Method
1. Preheat your oven to 200°C (fan).
2. Slice your potatoes. Place your potato alongside the handle of a wooden spoon or a chopstick, and slice down the potato until you hit the spoon. Continue to cut all along the potato at 0.5 cm intervals.
3. Place the potatoes in a large roasting tray, drizzle with olive oil and season with salt and pepper. Roast for 45 minutes to 1 hour until golden and crispy.
4. While your potatoes are cooking make your herby yogurt dip. Roughly chop your herbs and then fold them through the yogurt with the lemon juice and seasoning. Serve alongside your crispy Hasselback’s.
