Meringue Traybake With Pears, Chocolate And Yogurt Cream

Imagine a dessert that makes everyone pause mid-conversation: crisp meringue topped with silky yogurt cream, tender poached pears and a drizzle of dark chocolate. This traybake looks like you spent hours in the kitchen, but here's the secret - it's surprisingly simple to put together. Perfect for those festive gatherings when you want to impress but don't want to miss the party.
Ingredients
4 egg whites
250g caster sugar
2 tsp cornflour
2 tsp white wine vinegar
Poached pears:
4 pears
1 tbsp caster sugar
200ml water
½ tsp ground cinnamon
Yogurt cream:
To top:
150g of melted dark chocolate
A handful of chopped roasted walnuts
Method
Preheat the oven to 180°C (fan) and line a 25x30 cm baking tray with baking paper.
Whisk the egg whites until stiff peaks, then gradually add the sugar a tablespoon at a time until glossy. Fold in the cornflour and vinegar using a metal spoon.
Spread on your tray, put in the oven, and immediately reduce the temperature to 150°C (fan) and bake for 45 minutes.
Meanwhile, make your pears. Peel and slice them, then simmer gently in a pan with 200ml water, sugar, and cinnamon for 20 minutes until tender. Set aside to cool.
For the cream, whisk until just thickened, then fold in your Greek Recipe yogurt.
Once everything’s completely cool, layer it up: spread the yogurt cream over the meringue, arrange the pears on top, and then finish with a chocolate drizzle and scattered walnuts.
