Once you’ve made your own granola, there’s no going back – it’s that delicious! Our Christmas-themed granola makes the perfect topping to a festive breakfast and would also make a great homemade gift.
Ingredients
360g rolled oats
100g chopped walnuts
120g chopped pecans
100g flaked almonds
30g chia seeds
30g linseeds
30g pumpkin seeds
125g Yeo Valley Organic Unsalted Butter melted
50g honey
50g brown sugar (optional, if you have an extra sweet tooth)
1.5 tbsp ground ginger
2 tsp ground cinnamon
Zest of 1 orange
100g cranberries
Method
Preheat the oven to 180°C (fan) and line two baking sheets with baking paper.
In a large mixing bowl mix together the oats, nuts and seeds along with the spices and orange zest.
In a jug mix the melted butter, honey and sugar (if using it) before pouring over the dry ingredients and mixing well to combine.
Divide the mixture between the two baking sheets, spread and flatten the mixture before putting it in the oven. After 15 minutes, check on the granola and turn it before placing it back in the oven for another 10 minutes. Once golden, remove from the oven and place on a rack to cool completely.
Finish by scattering over your cranberries before using the baking paper as a funnel to transfer your granola to airtight containers.
