Coronation Trifle

In honour of King Charles III's coronation, we've taken his celebration trifle and added a Yeo twist.
Ingredients
The Trifle
1 pack of strawberry jelly concentrate
1 small ginger loaf cake
400g fresh strawberries
300g fresh vanilla custard
50g stem ginger - finely chopped
3 x 220ml Yeo Valley Organic Double Cream
1 tsp Vanilla bean paste
50g Pistachios - finely chopped
Method
Start by making your jelly following the instructions on the packet. Leave it in the fridge to cool until almost setting.
Cut your ginger loaf cake into 1cm chunks.
Cut your strawberries into ½ lengthways.
Mix your Yeo Valley Organic Greek recipe Yogurt with the custard & ginger.
Whip your Yeo Valley Organic Double Cream with the vanilla paste to stiff peaks.
Now assemble …Start with the cake at the bottom of your trifle bowl, making an even layer ensuring you plug all the gaps.
Stick the flat part of your strawberries to the side of your bowl & then a layer in the centre of the bowl.
Pour over the almost set jelly & put in the fridge until completely set.
Pour over the custard in an even layer followed by the cream.
Sprinkle over your chopped pistachios.
Either leave it in the fridge overnight wrapped in cling film or enjoy it immediately!
