Kefir and Date Porridge Loaf

Discover new ways to love your gut by introducing kefir into your daily diet. This date and porridge loaf is great for breakfast on-the-go and sliced as an simple snack.
Ingredients
250g Oats
3 Eggs (whisked)
1 tsp Bicarbonate of Soda
150g Ground Almonds
½ tsp Salt
1 tbsp Ground Cinnamon
4 tbsp Maple Syrup
150g Pitted Dates (chopped)
Décor – Jam & Yeo Valley Organic Unsalted Butter
Method
Line a 1.5 litre loaf tin with parchment paper. Pre-heat the oven to 170C.
Combine all of the ingredients in a large mixing bowl and stir to combine them.
Add the mixture to the loaf tin and bake in the oven for 30-45 minutes.
Test with a thin skewer which should come out clean (not wet) when inserted into the middle of the loaf. If the bake is still quite wet, cover the loaf tin with foil and continue to bake until cooked all of the way through.
Allow to cool, remove from the loaf tin and then slice.
You can toast this loaf or heat it in the oven. Best served with butter and jam.
