Ingredients
The Butter
1 Clove of garlic crushed
Handful of thyme
Juice of half a lemon
Pinch of salt and pepper
Method
Mix the butter, thyme leaves, crushed garlic and lemon juice with the back of a fork.
Rub over and under the skin of your chicken or turkey and roast until juices run clear.
